Instructions
1. Soak and cook the tapioca
Large tapioca pearls take time.
Bring 8 cups of water to a boil, add the pearls, and simmer for 5 minutes. Then cover the pot, remove it from heat, and let the pearls soak for 8–12 hours until they turn translucent with a chewy center.
